Pot roast is cheap, easy and delicious. One of those fabulous meals that take a cheaper cut of meat and turn it into a feast fit for company. Since so few people bother to cook any more, it always gets raves and reminds people of Sunday dinner at grammas.
This can also be made in the crockpot and it never fails. I get tons and tons of compliments on this, and it is embarrassingly easy.
Start with a roast that is the right size for your family. A chuck or bottom round roast is perfect for this meal. Surround it with chunks of red potato, baby carrots, fresh green beans and chunks of red onions.
Cover the meat with a mixture of 2 cans of cream of whatever soup and 1 envelope onion soup mix or their homemade equivalents.
Cover with foil and bake at 350 degrees for at least 1 1/2 hours (longer for larger roasts) .
Can be made in Crockpot on low for 6-8 hours.
